Idling thoughts of cheese and honey
It is another day off the well beaten track. We are going to nip 100m down the lane to get to Queixeria Don Gabino - a dairy products shop… with a website. http://www.dongabino.es/ They trace their history back to 1991. I know, it is 30 years ago but, 1991. Really, it is yesterday Eugenio said ‘Great San Simón cheese, my favorite from the DO manufacturers. The attention and service that Cristina and Iván provide is unbeatable. 100% recommendable!!’ They average five stars.
We have little to do but think of cheese. Galician cheeses are cheeses made from cow’s milk, (38% of Spain’s cow’s milk is produced in Galicia). Four Galician cheeses are protected under a PDO. I love the fact one is known as a winter cheese. I want more seasonal curds. The Quorum Cheese Company produces such in kilo and three kilo forms and is ripened for `105 days.
Lets talk about honey and bears. With the possible return of bears to Galacia, bee keepers are returning to walled enclosures to protect their hives.
